๐ Knock Your Socks Off Cherry Compote
Sweet cherries, a hint of almond and a deliciously easy homemade sauce
Recipe: Jenny from the Plot
Use: Spoonable sauce for breakfasts, desserts and more.
๐งบ Ingredients
- 1½ tablespoons cornstarch
- 1½ tablespoons cold water, to mix with the cornstarch (keep separate from the cooking liquid)
- 3 cups dark sweet cherries, pitted (fresh or frozen; do not thaw frozen cherries)
- ¼ cup plus 2 tablespoons granulated sugar
- 2 tablespoons water (or kirsch or orange juice), for cooking the cherries
- ¾ teaspoon almond extract
- 1 teaspoon orange zest (optional, but delicious!)
๐ Step-by-Step Directions
- Prepare the cherries. If using fresh cherries, rinse, remove the pits and cut them in half. Frozen cherries can go straight into the saucepan without thawing. Be sure they're pitted.
- Start the sauce. Add the cherries, sugar and 2 tablespoons water, orange juice or kirsch to a medium saucepan. Cook over medium heat for about 10–12 minutes, stirring occasionally, until the cherries soften and release their juices.
- Make the slurry. While the cherries cook, whisk the cornstarch with 1½ tablespoons cold water in a small bowl until smooth. Continue stirring the cherries occasionally.
- Thicken the compote. Give the slurry another stir, then pour it into the softened cherries. Cook for another 30–60 seconds, stirring constantly, until the sauce thickens enough to coat the back of a spoon.
- Add the finishing flavors. Remove from the heat and stir in the almond extract and optional orange zest.
- Serve and enjoy. Serve warm over pancakes, French toast or ice cream, or transfer to a shallow container and refrigerate until chilled. Try it with yogurt and granola, or add a spoonful to a smoothie!
- Store the leftovers. Keep in a covered container in the refrigerator, or freeze small portions for later. Thaw frozen compote overnight in the refrigerator.
๐ซ Important Storage Note
This is a refrigerator or freezer recipe, not a tested home-canning recipe. Refrigerate promptly at 40°F or below and use within 3–4 days, or freeze for longer storage. Do not water-bath can this cornstarch-thickened recipe.
๐ป Jenny's Tips for the Best Cherry Compote
Frozen cherries work beautifully.
There's no need to thaw them first. Just make sure they're pitted, and allow a little extra time if your saucepan needs it.
Mix cornstarch with cold water first.
That separate 1½ tablespoons of cold water helps prevent lumps. Add the slurry only after the cherries have softened and released their juices.
Keep the almond subtle.
Start with the listed ¾ teaspoon almond extract. Its flavor becomes part of the finished sauce after you remove the pan from the heat.
Want a different fruit flavor?
The optional orange zest adds a bright touch, and orange juice can replace the 2 tablespoons of cooking water.
๐ฅ So Many Delicious Ways to Serve It
- Warm over pancakes, waffles or French toast
- Over cheesecake or vanilla ice cream
- Swirled into plain yogurt with granola
- Layered into a breakfast parfait
- A spoonful added to a smoothie
๐ Fresh Cherries or Frozen Cherries?
Both work! Fresh cherries are wonderful when they're in season, but frozen pitted dark sweet cherries make it easy to enjoy this recipe any time of year. If you use tart cherries instead of sweet, the flavor and sweetness will change, so taste and adjust as needed.
A Little Something From My Kitchen to Yours
There's something special about a homemade topping that makes a simple bowl of yogurt or a scoop of ice cream feel like a treat. This one doesn't require fancy equipment or hours at the stove, just a pan full of cherries and a few little extras.
If you try it, I'd love to hear what you put it on first. Cheesecake? Pancakes? Straight off the spoon? No judgment here! ๐
